Tom jotted down these healthy things to emphasize in our diets this year:
Fruits/Vegetables:
- kale
- beet greens
- leafy greens
- watercress
- wild blueberries (frozen from CostCo)
- broccoli
- avocados
Herbs/Spices/Roots:
- garlic
- ginger root
- cinnamon
Protein sources:
- nuts (especially walnuts)
- legumes
- lean meat (especially fish and poultry)
- yogurt (with active cultures)
Miscellaneous:
- oatmeal (Karin prefers steel cut – more texture)
- extra virgin olive oil
Some of these he incorporates into a smoothie which is not only healthy, but delicious! This video captures the process Tom uses to create his smoothies:
Recap:
In a small mixing bowl, combine:
- 2 C Leafy Greens (we used Kale and Mixed Baby Greens)
- 2 C Liquid (juice, water, low fat milk, almond milk or soy milk)
- Use immersion blender to liquify greens into other liquid
- Add 1 C frozen Sweet Cherries and 2 C frozen Wild Blueberries and 1/2 very ripe banana
- Use immersion blender to blend frozen and fresh fruits into smoothie mixture
- Serve and enjoy!
Who needs a tossed salad? A delicious way to get your leafy greens and fruit.
Makes 2 12 oz. glasses.
