1707’s chicken pad thai
We used leftover rotisserie chicken (from, where else?, Costco!) to create a scrumptious chicken pad Thai meal. As usual, there was plenty — which we’ll use for weekday lunches or quick dinner options. We usually incorporate whatever fresh vegetables we have on hand – including sugar snap peas, snow peas, yellow, orange or green peppers.

1707s creamy asparagus soup
It’s bitterly cold in the Chicago metro region tonight – even though tomorrow is the first day of spring. Unseasonably cold temps call for soup – at least at 1707! Here’s the skinny on T’s delicious creamy asparagus soup – with no cream added!
1707’s marinated poached/baked salmon
T outdid himself with dinner tonight – he marinated salmon overnight and poached/baked it to a tender and flaky perfection.
1707’s puffy german pancake
T created a stay-at-home German Pancake (also known as Dutch Baby). It baked up hot & fluffy and he served it with fresh lemon wedges, powdered sugar and piping hot coffee. A perfect Sunday morning breakfast! Â Continue reading
