Several dishes have become favorites of the 1707 clan – Chicken Parmigiane, homemade pizza, Chopped Salad, Noodles & Company Knock-off, to name a few. But, all in all, the favorite of the favorites is T’s Chicken Fajitas. Truly superb.
The secret? The sauce.
It didn’t take long for T to realize that we could duplicate Noodles & Co‘s Penne Pasta with Chicken recipe for a lot (a LOT) less than indulging at Noodles. Feeding a family of 6 meant that duplicating this recipe was important to staying within our food budget.
We used leftover rotisserie chicken (from, where else?, Costco!) to create a scrumptious chicken pad Thai meal. As usual, there was plenty — which we’ll use for weekday lunches or quick dinner options. We usually incorporate whatever fresh vegetables we have on hand – including sugar snap peas, snow peas, yellow, orange or green peppers.
It’s bitterly cold in the Chicago metro region tonight – even though tomorrow is the first day of spring. Unseasonably cold temps call for soup – at least at 1707! Here’s the skinny on T’s delicious creamy asparagus soup – with no cream added!
T outdid himself with dinner tonight – he marinated salmon overnight and poached/baked it to a tender and flaky perfection.
